A truly successful cheese pairing is a match made in heaven, heightening the experience of both the dessert and the cheese. Finding great matches can be tricky, with flavors often competing, negating, or just plain spoiling one another. To take the guesswork out of pairing our Maitre Fromager Max McCalman has assembled our Dessert Collection, including:
  • American Camembert, a wonderfully soft and mushroomy cow's milk round from Michigan
  • Roves des Garrigues is a gentle cheese, with a little lactic taste accented with the flavor of thyme, laurel, fennel, lavender and citronella.
  • Valdeon is a rich, creamy, intensely-flavored cow and goat's milk blue cheese, saltier than Stilton and tamer than Cabrales.
