Many of these fall into the cheddar category, as American Artisans put their own spin on this popular cheese which originated in the village of the same name in Somerset, England. This fantastic collection gathers four of our favorites, each typifying the fearless spirit of these new-world cheddar producers.

• Fiscalini 18 Month Bandage Wrapped Cheddar: Rich, buttery and sharp, this world-class bandage-wrapped cheddar hails from California. This cheddar was awarded Gold Medal at the 2007 World Cheese Awards in London, making Fiscalini the first Non-British Cheddar to win the title of "Best Cheddar"! (8 oz)
• Widmer's Six Year Reserve Cheddar: Much like a limited edition book or lithograph, every piece of Widmer's cheese is handcrafted in small batches to ensure quality. This Wisconsin six year aged cheddar is rich with notes of caramel. While it is aged for a considerable period of time, it is still moist and creamy on the tongue with a noteworthy tanginess and slightly salty finish. (8 oz)
• Goat Cheddar: From Montchevre comes this aged goat's milk cheddar. Sharp and smooth, this Wisconsin cheddar is aged a minimum of one year, giving it a complex, nutty flavor. (8 oz)
